Coffee and Walnut Cake

This simple and quick recipe for Coffee and Walnut cake is both good to look at and delicious to taste.


Softened Butter or Margarine  250gms

Caster Sugar                               250gms

Self Raising Flour                        250gms

4 Eggs

Chopped Walnuts                      50gms 

Cold Strong Coffee                    15mls

Topping and Filling

Butter                                           225gms

Icing Sugar                                 225gms

Cold Strong Coffee                    10 mls

Whole Walnuts for Decoration


Heat oven to 180◦C/160◦Fan/350◦F

Grease and line 2 x 20cms or 8inch sandwich tins

Put the softened Butter/Margarine, Caster Sugar, Eggs and Self Raising Flour in a mixing bowl and cream until light and fluffy. Stir in the 15mls of strong coffee and the walnuts and fold into the mixture ensuring it is fully blended.

Spread between the two sandwich tins, putting a small dent in the middle of the tins for a more even finish. Put them in the oven preferably on the same shelf for 25-30 mins or until a skewer or thin knife comes out clean.

Meanwhile make the filling and topping by beating together the butter, icing sugar and coffee. Spread half the mixture on one cake and put second cake on top. Spread icing on the top of the cake and decorate with whole walnuts.
